What Does Healthy Mean to You?
To me, healthy isn’t about cutting out certain foods or saying no to things — it’s about saying yes to more fruits, vegetables, healthy fats, lean proteins, and whole grains. I’ll eat anything and I love bold flavors (sour and spicy!), but my boyfriend is more traditional in his tastes. I try to cook the bones of a dinner we’ll eat together and then we can add things that we like. I’ll often prepare a main protein that can be made into sandwiches, or put on salads or over rice as we see fit.
If I feel like I’ve had too much processed food, I’ll try to make sure I prep more fruits and vegetables by washing, cutting them up, and storing them at eye level in the fridge.
What Are Your Favorite “Healthy” Recipes?
1. Chicken Gyro Salad from Smitten Kitchen
I love recipes that can be adapted or involve a “make it yourself” component. This chicken gyro salad is equally good by itself or in a pita. The simple marinade makes a huge difference, and the cooling tzatziki sauce and cucumbers are so refreshing on a hot day.
2. Easy Beef and Broccoli Stir-Fry from Jo Cooks
This is my version of comfort food — it’s hearty and warm, but still moderately healthy (especially if served over brown rice) and super tasty. I always crave Chinese takeout and this is a great alternative.
3. Caramelized Pork Tacos with Pineapple Salsa from Pinch of Yum
Caramelized pork might not scream “healthy,” but this recipe is secretly all about the pineapple-cucumber salsa. I’ll usually add tomatoes and avocado and omit the mayo-heavy sauce. The flavors are incredible and super filling.
4. Golden Coconut Lentil Soup from Budget Bytes
This soup eats like a meal and keeps my tastebuds interested the whole time. I love the coconut and raisins, plus turmeric is so good for you!
