Combine the sugars, cinnamon, and nutmeg in a small bowl.
In a small bowl whisk together the egg white and vanilla until frothy.
Spray your slow cooker with cooking spray and add pecans. Pour the egg white mixture over the pecans and stir to coat. Pour on the sugar mixture and coat pecans. Cook on low for 2 hours 45 minutes, making sure to stir every 30 minutes.
Pour in water and stir. Cook 15-25 minutes more. Remove pecans from slow cooker and place on a greased cookie sheet. Let cool before serving.
Add a splash of brandy along with the vanilla extract to make these pecans a bit more festive.
